Guacamole Recipe for those of you missing authentic Tex-Mex appetizers

Guacamole ReceipeServings: 6

Ingredients

  • 2 whole avocados diced or mashed
  • 1/4 cup onion diced
  • 1/2 whole tomato diced
  • sea salt , to taste
  • 1 pinch cayenne and cilantro to taste
  • Optional: a pinch of chili powder/aji molido or aji molido dulce to taste
  • Optional: 1 tablespoon lemon juice

Great as a dip with crackers or chips, in nori rolls, collard roll-ups, and the like.

Instructions:

  1. Either dice the avocados or mash them with a potato masher or large spoon.  (some people even like a mixture)
  2. Add onions, tomato, cilantro, sea salt, and cayenne.

For those of you with a food processor, here is the recipe modified for using one:

Ingredients

  • 2 whole avocados
  • 1/4 cup onion
  • 1/2 whole tomato
  • sea salt , to taste
  • 1 pinch cayenne and cilantro to taste
  • Optional: a pinch of chili powder/aji molido or aji molido dulce to taste
  • Optional: 1 tablespoon lemon juice

Instructions:

  1. Place onions, tomato, cilantro, sea salt, and cayenne in a food processor and pulse chop until chunky. (If you opted for any of the extras, add them at this point as well.)
  2. Peel and pit the avocados and cut into large chunks. Place avocados in the food processor with the other ingredients and pulse chop to desired consistency.
  3. If you want chunkier guacamole you can always mash the avocado into the other ingredients using a fork or spoon instead of using the food processor.
